Hi Kiesha- kudos to you for being brave enough to make a tutorial on cream puffs the first time you attempted to make them–it’s not easy! But you demonstrated in your video what I used to always say when I taught culinary school: we learn from our mistakes. It’s too bad my web site is down right now. . . my idea was to provide immediate answers to baking questions via instant messages. I tried to do what I could to make a suggestion to you via twitter, but it’s not quite the same.
Just as a suggestion for future reference: spraying the baking pans actually causes the dough to spread & flatten, rather than rise & puff up into a ball shape like typical cream puffs. I always bake on parchment paper, which prevents spreading. Also, your dough was a little too wet, but it’s hard to know exactly what you’re looking for when you haven’t made the recipe before. Perhaps a tutorial is in order? I happen to know a good culinary instructor!

I loved this video! I just tried to make cream puffs (or profiterole… whichever you prefer) 2 weeks ago with the barefoot contessa recipe. The recipe I followed was super easy and my goodness I don’t know if I would have been able to handle steam baths and rocks hah. I filled mine with whipped cream, and coated them with a chocolate sauce.
